Melisseus Honey is harvested across Western Australia by our family‑run beekeeping operation. Every jar is filled with raw, unprocessed honey that goes straight from the hive to the bottle with minimal handling. We extract in small batches, package quickly, and never store honey for long periods — keeping it as fresh and vibrant as the day it was harvested.

Because our honey is completely raw, it naturally crystallises faster than heat‑treated supermarket honey.  Crystallisation is a sign of purity, not a flaw.  If your honey candies, simply warm the jar gently in a bowl of warm water or leave it in a warm car for a short time. Avoid microwaves and direct sunlight, as high heat can damage the natural enzymes and delicate qualities that make raw honey so special.
